Description | This bundle consists of eleven texts that were cut from one recording. These texts consist of Marcelino describing his trade of butcher: 1) Marcelino describes how he learned the trade of butcher. Describes the ingredients involved in the preparation of "barbacoa", 2) describes how pork and beef are selected and slaughtered and how their blood is used as part of food preparation, 3) describes the process of slaughtering beef and removing its meat and skin, preparation of beef for "tasajo" and "barbacoa". Marcelino also describes the other types of preparations for beef, 4) description of the preparation of beef broth soup called "conosome" and the preparation and description of "barbacoa" cooked in an earthen pit, 5) description of different beef and how they are prepared, 6) description of the different breeds of cows and bulls, 7) Marcelino discusses how he cares for the animals that he raises, when he needs to vaccinate them and when a cow is right to be purchased for slaughter, 8) Marcelino describes how to prepare "amarillo" mole and how to prepare each kind of tripe of the cow, 9) a comparison of cows and bulls and a description of how to make cheese, 10) a description of the different kinds of food one makes from pork, 11) A description of how each part of the pig is used and how it is consumed. Also describes how the fat is used from beef. At the end Reginaldo thanks Marcelino for sharing his knowledge. Recorded with a Tascam HD-P2 solid state field recorder and Shure SM10A head-worn microphones in the patio of Marcelino's house. He lives down in the valley just below Reginaldo's home. |
